Mediterranean Lentil Soup with Swiss Chard, Heart Healthy, High in Fiber, Weight loss
I am trying to eat more fiber and I noticed that once I started eating a High fiber, Mediterranean diet, I started loosing weight more quickly and it really helped me with my digestion.
This recipe is one of my favorites, I love lentils and they are very healthy for you, and you get the added benefits of the swiss chard.
You can eat this recipe by itself or pair it off with your favorite meat, fish, or poultry.
It's great for left overs, to take to work and I love to eat it for breakfast with an egg.
Recipe:
2 cups of small lentils
1 bunch of swiss chard - chopped minus the stems
1 large onion chopped
1/2 bunch chopped cilantro
1 - 15oz can of tomato sauce, (I used an Italian herbs tomato sauce)
32 oz Chicken broth (reduced sodium)
3 cups of water
Minced garlic to your liking
salt to your liking
pepper to your liking
Feta cheese optional as a topping and / or Chia seeds as a topping
